Not sure that these look very appetizing, but trust me, they are delicious! I am grateful to be able to have the means to experiment in the kitchen, at the request of Expert2 and the girlchildren! This batch of homemade energy bars was inspired by a recipe in Run Fast, Cook Fast, Eat Slow by Shalane Flanagan and Elyse Kopecky. This is an inspirational book that has given me such good ideas for fueling your body with clean, healthy food, especially for exercise. Anyhoo, I digress….I made this batch with dates, a mixed fruit and nut combo, and honey…then dusted in coconut flour so they weren’t so sticky. I used my KitchenAid Blender to dice the fruit and nuts. You can find the full recipe here.
